Matcha Chia Pudding with Coconut Cream

Start your day with a matcha – a Matcha Chia Pudding! This chia pudding is loaded with healthy fats and fiber from coconut milk, chia seeds, and avocado to keep you full and energized for hours.

This make-ahead breakfast offers a grab and go option for something healthy to start your day with no morning prep work. You can even double the recipe and make-ahead your breakfasts for a couple of days!

I love that matcha offers a hit of caffeine, but because it contains the compound L-Theanine, it is calming to the brain. Energy without the jitters! It’s also a highly potent antioxidant and rich in polyphenols.

Ingredients

  • 1 can full fat coconut milk
  • 2 tbsp matcha powder
  • 1/4 cup chia seeds
  • 1/4 avocado

Directions

  1. Blend together coconut milk, matcha powder and avocado. 
  2. Add 1/4 cup of chia seeds to a resealable mason jar or bowl and pour the mixture over the chia seeds.
  3. Refrigerate and let sit overnight.
  4. To serve, whip coconut cream with 1-3 drops organic vanilla stevia (optional) and layer the chia seed pudding and top with the rest of the cream.
