Seasonal Summer Salad

A simple dressing allows seasonal produce the chance to shine!

You really cannot go wrong if you’re buying what’s in season because it’s much more flavorful but mixing textures and tastes will keep it interesting. In this salad, I am pairing a cool crisp radish with sweet summer corn and buttery avocado. Yum!

Ingredients

Summer Salad

  • 4-6 cups of mixed greens
  • 2 Persian cucumbers, sliced
  • 4 radishes sliced
  • 1 ear of corn, boiled and sliced of the ear
  • 1 avocado, halved
  • 1 cup of grape tomatoes, halved
  • 1/2 cup celery tops, chopped
  • Optional Protein Toppings: This salad pairs well with a simply grilled chicken or shrimp.

Simple Vinegarette Dressing

  • 1/4 cup EVOO
  • 2 tbsp ACV
  • Juice 1/2 lemon
  • 1-2 garlic clove, minced
  • 1 tap Dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp honey (optional)

Directions

  1. Prepare your base by adding mixed greens to a large bowl.
  2. Thinly chop your cucumbers, radishes, corn, tomatoes, and celery. Add on top of the greens.
  3. To create the dressing, whisk all the ingredients together in a medium glass bowl and pour over a seasonal summer salad and toss to coat.
  4. Top with slices of avocado and optional grilled chicken or shrimp.
